Healthy Cooking - Spaghetti Bolognese

Mrs Atkin and Mrs Rodger are back with another healthy cooking video. This week, they are bringing you Spaghetti bolognese.


Spaghetti Bolognese

Ingredients

500g low fat minced beef

250g spaghetti pasta

1 large onion, finely chopped

1 large carrot, finely chopped

2x 400g cans of chopped tomatoes

1 heaped tsp crushed garlic

1 beef stock cube

1 heaped Italian herbs

2 tsp tomato puree

1 tbsp olive oil

Grated cheese


Method

Boil water in a pan and add pasta to cook until al dante.

Heat the oil in a large saucepan and add onion and carrot. Cook until soft.

Add the mince and cook until light brown in colour

Add tomato puree, herbs, garlic, stock cube and chopped tomatoes

Simmer gently for 20 minutes.

Drain the pasta and serve with the Bolognese sauce. Add grated cheese.


Alternatives

You could replace the minced beef with minced pork, turkey or quorn or other substitute. You can add more vegetables of your liking.

Serve your dinner with a mixed salad and garlic bread.
