Frittata with Bacon
Ingredients
6 eggs
1 large sliced onion
1 chopped red pepper
1 sliced courgette
125g bacon
150g grated cheese
Method
In a medium sized frying pan with a little oil, gently cook the vegetables and the bacon
Pour the beaten eggs over the vegetables and bacon. Stir gently until combined.
Sprinkle the grated cheese over the top and cook in the oven until golden brown
Cut and serve with a side salad
Alternatives
You could replace the bacon with ham or even fish, smoked salmon or cod pieces would be nice. You can add more vegetables of your liking and keep it completely vegetarian by using more suitable cheese too.
Serve your dinner with garlic bread or a jacket potato.
