• 250g (8oz} plain flour

  • 175g (6oz) softened butter

  • 175g (5oz) caster sugar

  • 3 medium eggs, beaten

  • 2 tablespoons milk

  • 150g (5oz) glace cherries

  • 60g (2oz) desiccated coconut

Cook: 45 mins - 1 hour




Before you start:

Wash hands
Put on apron
Tie hair back


Heat the oven to 160C/140c fan/gas 3

1. Sift the flour into a bowl

2. Add the butter, sugar, eggs and milk

3. Beat until smooth.

4. Cut the cherries in half and fold into the mixture.

5. Mix in the desiccated coconut.

6. Spoon into the loaf tin and level the surface.

7. Bake the loaf in the centre of the oven for 45 minutes to 1 hour, or until the cake has risen and feels firm to the touch.
